Our olive trees grow on organic soil, fed only with green manure grown on our farm. The olives are harvested by hand or using minimum impact machinery, then pressed within 8h from harvest in a mill only 1km away from the olive groves. The olives are pressed through a closed continuous cycle, then the oil is filtered to better maintain its quality over time, and is then stored in stainless steel silos under argon gas.
The presence of Maurino olives bring the perfect balance to this oil, making it bitter, spicy and fruity at the same time

At Monna Giovannella, we grow ancient varieties of wheat that have remained unchanged since before the introduction of industralised agriculture. These types of wheat require us to slow down and get back in tune with the forgotten rhythym of nature. We grow these crops organically in a rotational system in order to keep the soil balanced and rich in nutrients without the use of any chemical fertiliser.

Bees bees play an essential role in maintaining the balance of an ecosystem and for this reason they couldn't be missing from Monna Giovannella. Our activity as beekeepers has allowed us to understand and fully appreciate these fascinating and wonderful insects. The commitment, care and passion we dedicate them is given us back by the production of some beautiful honey we'll soon present.
